May honey is a polyfloral honey, generally obtained by bees by collecting nectar from fruit trees, alfalfa, rapeseed, acacia and other spring flowers. Due to the variety of flowers, the May honey has a special aroma, which combines light notes of strawberries, sage, cherry, apple, willow, maple and other plants that bloom in May. The honey has a reddish-yellow color, and in crystalline form it might be from light yellow to white. Due to the homogeneous crystallization, with relatively fine particles, this honey has a pleasant and delicate texture, being one of the most requested types of honey. Along with its property to be easily digested, honey has a number of other therapeutic properties, helping to normalize blood circulation, increase energy levels and improve mood. Honey also effectively fights insomnia and nervous system problems, it is recommended for consumption in case of eye problems or atherosclerosis.
